Agave Peanut Butter Granola Bars
2/3 C Agave Nectar
3/4 C organic chunky peanut butter
4C granola cereal mix ( I like the bulk section at Whole Foods...choose what you like...I like the Hemp Granola, and be sure to read ingredients for granola you choose. The hemp has molasses in it and others have other sugars)
Place granola in a large bowl
In a very small saucepan, bring agave to a boil
Remove from heat and quickly add peanut butter and thoroughly blend until smooth.
Pour mixture over granola and combine thoroughly
Press firmly (I use waxpaper) into a 9x9 or 9x13 baking dish
let cool and cut into bars or squares
(I put mine in the fridge for 30 minutes..they need to be totally cool to cut)

Remember, Agave is a wonderful sweetner for diabetics as it doesnt spike blood sugar levels. It does have 60 cal per TBS and 16g sugar and is very sweet!
