Health Expo at Mohegan Sun on Sunday Nov. 1st

Here are a few recipes from the Expo.

Coconut Date Cookies

Prep Time: 5 minutes
Cooking Time: 20 minutes
Yields: 15-20 servings
Ingredients: 6-7 dried pitted dates
1 cup rolled oats
2 cups whole wheat flour
½ cup shredded coconut
½ tablespoon cinnamon
¼ tablespoon nutmeg
½ cup olive oil
½ cup maple syrup
Directions:
  1. Soak dates in 1 cup of water for 30 minutes.
  2. Preheat oven to 375 degrees.
  3. Combine oats, flour, coconut, cinnamon and nutmeg in a bowl.
  4. Add oil and syrup and mix until all ingredients are moist.
  5. Form little balls and place on a lightly greased cookie sheet.
  6. Press cookies lightly so they do not roll off cookie sheet.
  7. Bake for 10 minutes.
  8. Take out cookie sheet and flip cookies.
  9. Bake an additional 10 minutes.

Nutty Chocolate Crispies

Prep Time: 5 minutes
Cooking Time: 5 minutes
Yields: 12 servings
Ingredients: 1 cup brown rice syrup
½ cup almond butter
½ cup barley malt sweetened chocolate chips
3 cups brown rice crispies cereal
Directions:
  1. Heat brown rice syrup and almond butter in a large skillet, over low heat until creamy.
  2. Stir in the chips until they melt.
  3. Remove from the heat and stir in rice crispies.
  4. Gently press into a baking dish and allow mixture to set until firm, about 30 minutes.
  5. Cut into squares and enjoy.


Raw Sticky Buns

Prep Time: 5 minutes
Cooking Time: 20 minutes
Yields: 15-20 servings
Ingredients: 4 tablespoons of Raw Chocolate Nibs
3 tablespoons of Agave
1 tablespoon of Coconut Butter
1 cup of Pitted Dates
1cup of Pecans

Directions:
  1. Take the dates and pecans blend them together in a food processor until they can be rolled out
  2. Take the raw chocolate, coconut butter, and agave; incorporate them together
  3. Roll out the dates and pecans with a bit of cinnamon on wax paper
  4. Then spread the chocolate on top of it
  5. Then roll it all together.
